We went to the outdoor mall and did the store-to-store trick or treat thing first, since our neighborhood is pretty lame for trick or treating. Claudia wasn't into it at first. She soon learned that there was candy to be had, though, and now she's all about the trick or treating.

Which skirt with this outfit????

This one, which is knit, not denim:

Or the denim one, which has built in knit shorts that I can cut out pretty easily (the skirt only cost $3):

This picture was taken on Tuesday. I was really happy with how it turned out; last time "they" came to take pictures at the daycare, Claudia cried no matter what they did (even when they brought Nick in to try to calm her down), and they didn't take her picture at all.

Nick had school pictures taken today. They make you PRE ORDER them! How f'd up is that? We'll see how they turn out...

Aug. 24th, 2009 @ 06:55 pm King Ranch Chicken Casserole--PSA
Tonight, I made King Ranch Chicken Casserole. It tasted Very Good, but was way too soupy as written, and didn't have enough spice (even for me). When I make it again, and I WILL be making it again, I will omit the 2C of chicken broth, add a 2nd can of Rotel (I use the mild version for the kiddos), sprinkle some chili powder throughout (or maybe just mix it into the sauce) and mix some light sour cream into the sauce.

We really liked this.

Aug. 4th, 2009 @ 07:25 pm An easy casserole that some of you may like
Tags:
I always mix this up the night before and just stick it in the oven when I get home the next night.

1 1/2 cups uncooked macaroni
1 can cream of chicken soup (I use the low fat, low sodium stuff)
1 cup milk
1 cup cheddar cheese
1 tsp curry powder
1 1/2 to 2 cups cooked diced chicken
2 tbsp pimento (I never bother with this)
mushrooms (I don't remember how much b/c I don't like them, so I don't use them. To taste, I guess ;))

Mix all ingredients together in a 2 quart casserole. Cover and bake for 1 hour at 350 degrees.

I really didn't think this sounded good at all when my mother gave me the recipe. But my family really likes it.

Nick's homecoming (did I ever mention he was in Colorado for 2 weeks?), this past Monday. Claudia was soooo happy to see him, every time he sat down on the floor, she'd sit in his lap.

I colored my hair this morning. I don't think it's very noticeable, b/c my only intention was to brighten it a bit and cover the gray, and this color accomplished both goals, but my gray wasn't very noticeable in the other pics I posted.

Random, but I love this dress on her:

Thursday: Filet Mignon on the grill with leftover Romanoff noodles and lima beans

Tonight: Beef Enchiladas, Spanish Rice, Corn, and Strawberry margaritas

Jun. 1st, 2009 @ 09:07 am Here we go with round #2...
June is no-spend month. I don't need to start getting stuff for Nick for school until July or August. The kids certainly don't need clothes, though Trav and I could stand to have some more things. We may spend a little bit of money on summer clothes for us, but I would hope to keep it at $150 or less.

My goal is to recoup some of our savings.

I am hoping that the re-fi comes through soon.

May. 31st, 2009 @ 07:50 am The reason I'm fat...
What a lovely food day it has been.

The day started with Cinnamon Swirl French Toast and bacon. Entirely too much bacon. ;)

We grabbed sandwiches for lunch.

Dinner was Pan Fried Tilapia, buttered noodles, and peas and carrots. I can't remember the last time I cooked fish that wasn't fish sticks. Claudia ate pretty much all the fish we gave her. I thought it was tasty, too, and I'm not a huge fan of fish. I think we will start trying to do a fish meal once or twice a month.

Dessert....ahh, dessert. Last night, I made a New York style cheesecake with strawberry filling. Sooooo good.

Claudia turned 16 months on Saturday. She's getting to be such a big girl, and in some ways, she is so different from her brother. A brief update follows. I am not sure that I can cover everything, because it seems like she's doing so much that I am sure to forget stuff.

  • She LOVES reading books. She will sit in my lap and let me read to her for a very long time. At this age, Nick would only sit for a couple pages, and I don't remember him ever just sitting on the floor by himself, "reading" a book, but Claudia will pour over books and babble to herself and point at the pictures for a good 10 or 15 minutes. Last night, Nick read Brown Bear Brown Bear to her before bed, and it was to die for cute, to see him sitting in the big rocking chair in her room, and her in her little rocking chair, reading a book together.

  • Still not sleeping well. She woke 3 times last night, I think. And even if we only have to get up long enough to pop the paci back in, I'm still up, and my sleep cycle is still disturbed. I don't know what we're going to do about the situation. Nick was sleeping through the night at this point.

  • She seems to be having a language explosion. She's been trying to use more and more words. She doesn't have a very large vocab at this point ('uh-oh,' 'hi,' and 'bye bye' seem to be the extent of it), but last night, she was trying to say 'peek a boo,' and she will point at books and say 'bah' and Trav swears that last night she said "up high" when they were playing a game of high five. Even without words, she is very communicative, and we can tell that she understands a great deal of what we say to her, b/c she follows directions very well. She is also very good at leading us to what she wants and pointing and saying what we're sure is "that." She also signs "more" and "please."

  • She is "into" clothes and trying to dress herself. She likes to try to put her socks and shoes on. She takes bows out of her hair and then tries to stick them back in.

  • LOVES to brush her teeth and her hair.

  • She's a stickler for details, I think. Last night, since I worked late, we got a VERY late start on bedtime, so I figured that instead of reading her "Brown bear Brown bear" (which Nick had already to her anyhow), followed by "The Going to Bed book," followed by "Goodnight Moon," I'd just skip right to "Goodnight Moon." She was not having it. She INSISTED that I read all 3, in the correct order. What a little creature of habit!

  • Still super-cute.

Apr. 24th, 2009 @ 10:32 am Appraisal question...
Does anyone know?

The house is going to be appraised sometime in the next week or so for the re-fi.

What condition does the house need to be in? Ready-to-be-shown to prospective buyers condition? Because omg, I just don't know how I'm going to maintain that level of clean in here. We also need to do some work outside, and we only basically have Sunday to do so.

I'm stressing about it a bit, b/c I want to make sure we are appraised as highly as possible...

last night/this morning was a BAD night for claudia. she woke like 3 times for pacifier replacement, and then just before 5 she WOKE UP. it took us until 6:30 to get her back to sleep.

so when trav left for work, he made sure nick was set up with tv in the living room and told him to be quiet so i could get some more sleep.

that was at 7:30. i got out of bed at 9:10. i come into the living room. nick and i talk for a couple minutes and then i hear the TOASTER pop in the kitchen.

nick: well, there's my toaster streudel!

me: you made your own toaster streudel?

nick: i've had two more before this!

kid's a little on the self-sufficient side.

(except that he couldn't change the channel on the tv by himself. in his defense, though, the remote had fallen on the ground, and the batteries and fallenn out, and he put them back in wrong)

Apr. 15th, 2009 @ 11:44 am Moms of boys: I have hand me downs...
Does anyone out there need 3T shorts for their little ones? I have quite a few pairs, mostly denim, and almost all pull-on elastic waist style (great for boys who are potty training or newly potty trained). Almost all of them are Target's Cherokee brand. Like 6 pairs of denim and a light khaki, darker khaki, and navy blue.

I think I also have a couple pairs in 4T.

Please let me know if you want them, and I'd be glad to send them on to you, for the cost of shipping...

Apr. 5th, 2009 @ 08:03 am Girl can pack away the food...
My baby girl who was so resistant to table foods? Last night at Red Robin, she ate 2/3 of a kid's meal all by herself. I really thought it would be a total waste, getting her own meal, but she ate more than half of a grilled cheese and all the mandarin oranges, plus she assisted in eating the onion rings that we got as an appetizer. It was amazing. :) I'm not sure why, but seeing her eat always amazes me. ;)

She's still doing well after the surgery. Wehave to put drops in her ears twice a day (and they were EXPENSIVE...have I mentioned the huge-ass $2500 rx deductible we have?...the drops cost $103 out of my flexible spending account), and there's been a little bit of drainage, but nothing that's not to be expected.

She slept through the night last night, after I finally got her down. I got it in my head to try to get her to fall asleep IN her crib, but it didn't happen. We settled for rocking in her room with the music going, instead of rocking in the living room with the news and such on. Maybe she'll start associating the music with bedtime if I start rocking her in her own room. We'll see. I just know that if we keep rocking her all the way to sleep, we're only delaying her gaining the ability to fall asleep on her own and therefore comfort herself when she wakes in the middle of the night. We got lucky last night, in that she didn't wake.
